Aaaaand we're off!
I swear, every holiday season seems like a race against time. Halloween to New Year's Day goes by in a blur each year. I wish we could stop the madness, slow down a little, maybe even space out the holidays instead of cramming them in one after the other. Since that isn't going to happen, I'm going to try to work on being more present and enjoying those special moments that occur in the midst of all the holiday hullabaloo.
I had planned to make this pie the weekend before Thanksgiving as I read in the recipe reviews that it freezes well. But that didn't happen. Plan B was to make it the morning of Thanksgiving while Mom watched Ruby. That didn't happen either. After all my researching of recipes and agonizing over choosing one, we didn't get to enjoy this pie on the big day, because I just couldn't get my fecal matter consolidated this year (in layman's terms: I couldn't get my s**t together). (Thankfully, Mom had made a German Chocolate Cake at Eric's request so we didn't go dessert-less.) But it did happen the day after Thanksgiving and you know what? It was soooo worth the wait.
After spending most of the year impatiently awaiting her arrival, I'd be remiss if I didn't count my blessings and note how thankful I am to have my healthy, happy baby girl with us. Ruby and I had a little photo session for the Christmas card picture and here's a few outtakes.
Here's hoping you all have a moment to catch your breath from time to time and to enjoy the ride during this mad dash to the end of the year!
