Looks so refreshing.
Like you, I grew up on salted watermelon and even salted oranges so I can never resist sprinkling a bit of salt when I eat either.
Have you ever tried 'black salt'? It is also pink & also originates from the Himilayas but I don't think it's the same as 'himilayan salt'. It's used in pakistani/indian fruit salads & dips/chutneys and is utterly delicious.

This sounds uber refreshing! I'm so sad, I had a big container of leftover watermelon in the fridge that I kind of forgot about and it turned into gooey fermented slush. I could have totally made this!

I love making watermelon aqua frescas too, by adding some sparkling lemon water to watermelon juice with a little honey(: I guess it's kind of the same idea as your recipe! (acid + a bit of sweetness= perfect refreshing drink)Never tried it with salt though...silly me (I'm a firm salt believer too)
